What's Good For You This Season?

This week I was blessed with the opportunity to do a cooking demo for a group of 20 very fun ladies in Frisco, TX. I brought some of our goodies from our urban farm, and purchased the rest at the farmers market up the street to maintain the theme of S.O.U.L. (seasonal, organic, unprocessed, and local) food.

Let's dig in to our choices and the nutritional benefits!

First, I made honeydew melon wrapped with delicious prosciutto for the ladies to nibble on while I prepared the big demo. Honeydew melon is the easiest melon to find locally that is in season, so it was a no-brainer! In addition to being delicious, honeydew offers appetite control, tons of fiber, and is rich in potassium, magnesium, and vitamin C. Add a little saltiness and we're snacking happy!

Secondly, the hostess of the event prepared caprese bites with basil from Ike & Eli's. Stacking one cherry tomato, a leaf of basil, and a tiny mozzarella ball on a large toothpick gives party guests a free hand to work with. Basil is antibacterial and contains powerful antioxidants, which are great for your gut flora and digestion. Cherry tomatoes, in season this fall in Texas, contain lycopene and cancer-fighting benefits, particularly fighting against breast cancer.

The grand finale got us feeling a little silly! I created a bruschetta with sauteed butternut squash from my compost bed, red onion, basil cut into ribbons (chiffonade), and garlic-rubbed baguette. Butternut squash is packed with vitamin A, which is necessary for healthy bones, and is full of both alpha and beta carotene. The cancer fighting benefits are especially great for preventing lung cancer. Red onions (and all of the onion family) are anti-inflammatory, antibiotic, and antiviral, making them ideal for allergy and asthma sufferers. Garlic is great for getting over a cold quickly as well. (And the hostess loved it!)
